Variation of jerusalem artichoke. Jerusalem artichoke puree with mussel stock, artichoke chips, dusted with dried artichoke and mussel powder. The Norwegian strawberry season has quickly sprung upon us and we love working with ingredients that grow locally around us. Here we have thinly sliced fresh courgettes, marinated them in lemon and olive oil and served it together with Sicillian pistachios, coriander and sesame seeds and a powder we made from dried shrimp shells and mushrooms. We pair it together with a natural orange wine, that has had a lot of skin contact and is high in acidity.
